Sweetcorn friters-how do you make them ?

1 small tin corn
50gr flour
1/2 tsp salt
1/2 tsp baking powder
1 egg seperated
Drain corn, and mix the drained corn with the flour, salt and baking powder.Stir the egg yolk into the corn mixture.beat the egg white stiffly and fold into the batter.Fry in shallow oil or butter until golden brown, turning once.

My corn fritter mixture is just standing & waiting to be cooked.Serving with chicken Maryland, fried bananas, roast onion, taters & pumpkin!Naughty but nice & tasty!

I tried again to make them after reading this thread, but they stick like billyo to my pan, and stay doughy even when I try to cook them longer on a low heat.I even got out the non-stick wok to try and successfully get myself a fritter worth eating!

I prefer not to have too much flour in mine - no good for my tummy.

My tip - read the ingredients on your cans of creamed corn folks!
You will be quite shocked at the varience in corn content!!!
I'm quite happy using the budget or home brand of many things but not creamed corn ... it's got to be Watties!

The nicest ones I have ever tasted were a Peter Gordon recipe - they were deep fried sort of savoury choux pastry - very yummy with a lovely spicy relish -

I tend to agree with that though for me Oak is best. But def not budget also I am not a fan of the recipes starting with a cup of flour I prefer much less much like Cookessentials recipe. I generally use 1 can creamed corn 2 tablespoons of flour and half a tsp of baking powder and egg and maybe a pinch or two of curry powder.

I use fresh sweetcorn only - or my own fresh sweetcorn frozen for later in the year.

No flour or baking powder at all needed.

Just eggs and fresh herbs or a handful of spinach.
Salt and chilli or black pepper.

If you want them fluffier then beat the egg whites and fold under just before frying/baking.

Maybe I'll omit milk next time around.I too definitely go for the Watties brand of creamed corn.
