sweetbreads are glands from the neck of a milk lamb, they are not brains

Had me thinking there for aminute c.e. We were talking about sweetbreads, brains and the other offals some eat yesterday.

Ok, thanks I will try mataura.According to butchers in Dunedin, freezing works are no longer extracting the brains.Apparently the bottom fell out of the overseas market when the mad cow disease took off.Strangethe links in peoples minds

As a good sheep farmers wife, I must let you know that there are far more tastier parts of the sheep to eat!! ;)

My father used to love sheep brains, so I tasted them when I was a kid.They are a not unlike sweatbreads, a bit softer and squishier in the mouth hahaha

Brains are delicious cooked the middle eastern way, braised in a small amount of oil,lemon juice with some turmeric, onions.Ther are lots of other delicous recipes.It is the soft texture thatmakes them quite unlike other offal.I love sweetbreads too but brains..oh la la!
