ORANGE CARROT MUFFINS
1 & 1/2 cups wholemeal flour
1/2 cup oat bran
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 egg
2/3 cup orange juice
1/2 cup buttermilk
2 Tblsp sugar
1 tsp grated orange peel
2 Tblsp oil
1 cup coarsely grated carrot

In large bowl, mix together flour, oatbran, baking powder, baking soda and cinnamon.In separate bowl, beat together egg, juice, buttermilk, sugar, orange peel and oil.Mixture will look curdled, but don't worry.Stir in carrot.

Add wet ingredients to dry, and stir until just moistened.Divide batter between muffin pans.Bake for approximately 20 minutes in a 200* C oven.

Oh wow thanks heaps I love doing muffins. I don't eat them myself however the kids love em. I always freeze them and get them out for lunches. :)
