nice "warm" cray with lots of black pepper...green side salad with matoes and cucumber...

I recently enjoyed a pre-dinner plate of shredded crayfish, dressed with a little egg mayonnaise & lots of extra virgin olive oil, Black pepper and a bit of sea salt. It was served chilled with wasabi on the side and some nice crackers - I really liked it this way and I don't usually eat crayfish apart from the legs, they're the best! Oh and Bob's very cute! Hope you shared some cray with him ;-)

You could throw it in boiling salty water, remove it after eight minutes, cut the tail flesh in slices. Let it cool down. Then a knob of butter in a frying pan with few drops of Pernod, bit of crushed garlic, finish with cream/some cracked pepper. Serve on a bed of rice, should make a nice dish for 4 people.

Looks Awsome...Yummy

Watched a mate of mine rip the tails off 4 crayfish.. slice all down the middle and clean up and cut into large chunks...Rolled in cornflour, then dipped into a batter made with self raising flour, ground black pepper and "iced" water stirred to the right consistency..Into hot oil in deep fryer and cooked till golden and floating in oil...Dipped into homemade seafood sauce.... magnificent...
