So today I've made.....

1x Banana cake, 12 Large Banana choc chip muffins and 12 Small. Some Chocolate Fudge, Coconut Ice, Choc Chip Truffles, 12 Large White choc & Berry Muffins and 6 Small. Now what can I make? lol I only have wholemeal flour left. :o(

You Have to try this one!! Its sooo good!!

Wholemeal Honey and Almond Cake

300g Butter
250g Caster sugar
4 Eggs
1 tspn Van Ess
150g Wholemeal Flour
2 tspn BP
150g Ground Almonds
50g Flaked Almonds
4 Tbspn Melted Honey

Cream butter and sugar.
Add eggs 1 at a time and beat well. Add van ess and beat in well.
Stir in ground almonds.
Stir in flour and BP gently.
Pour into lined baking dish.
Spread flaked almonds on top.

Bake 40 - 45 mins 160

Remove from oven and pour melted honey over evenly.
Cool in tin.

You could also make this with wholemeal flour. great for freezing down to!

Dutch Apple Cake

125g Butter
1 C Sugar
2 Eggs
1 1/4 C smooth WARM apple sauce

2 C Flour
1 tspn BS
1/2 tspn Salt
1 1/2 tspn Cin
3/4 tspn Cloves

2 Diced Apples
1 C Raisins
1 C Nuts of your choice

Mix butter, sugar and egg for a few mins.
SLOWLY mix in Warm apple sauce.
Add dry ingredients and mix in.
Add raisins, chopped apple and nuts.

Bake 180 45 mins

This is a winner in this house and goes sooo fast!!
I double it and freeze 1 :) Have made it with maca nuts and walnuts so far. I have even added speculaas spice and not added the cin and cloves. Both are winner on taste!!

Yip, I make them all the time:), just make sure its a bit wetter mix is all.

chewy oat cookies
125g butter
1/4 cup maple syrup
2 tabsp icing sugar
1/2 cup flour
1/2 cup rolled oats
1/2cup shredded coconut
1/2cup firmly oacked brown sugar
1/4 teasp bicarbonate soda
oven 160-2 lined baking trays
Filling
mix half the butter 3 teaspoons of syrup and icing sugar until smooth
Biscuits
Combine flour oats concunut and sugar in med bowl
stir remaining butter and syrup in a small saucepan over med heat until butter is soft - stir in soda
Add to oat mixture and mix well
roll slightly rounded teaspoons of mixture and place on trays - makes about 36 cook about 15mins -until they just start to colour
leave on tray for 5 mins - then cool on wire rack - then fill with filling
I have been leaving them unfilled and they are just as nice like that -something different

I ended up making an awesome stir fry will put the Chinese shop out of business my mate said lol. Then I made a lasagna for my brothers partner and son and some spicy nacho mix to be frozen. My brother who was 29 was killed 4 week ago and it's all I can do to help.
