Salsa

Just have to say the best thing in my kitchen at the moment is Salsa I am getting some good tomatoes corriander and basil from the garden right now and we have been given several bottles of good quality olive oil for christmas so I have been making allot of salsa. Finely chop the following,

4 med Tomatoes ripe and firm
1oinion red is best but I mainly use brown as I have allot to use up
large bunch of corriander and or basil

mix in a bowl and then add a few tablespoons of lemon juice and a generous slosh or two of olive oil.

I usually have a large jar in the fridge at home all the time

Lovely on toast (particularly sourdough)
Nice on BBQ meats
add to salads
quick way to make raw fish is soak fish in lemon juice add salsa and coconut cream.

I take it on the boat in a jar when we go away a large jar and a loaf of sourdough last me several days for food supplimented with some fresh fish or mussels of course.
