Noted ( I think was J Oliver in Greece) how he constantly had this dried bunch of Oregano and everytime he needed some he just took some of as if one was using a pepper grinder style, that is holding the dried buch and sprinkle some into the dish he was preparing, caught my eye this bit, interesting in the use of dried herbs that one would had prepared earlier.
Cheers.

That's right Valentino.Oregano (and marjoram) are among the few herbs that have a good flavour dried as well as fresh. What we grow in NZ as Marjoram is actually closer in flavourto Greek Rigani than our oregano is.

After watching that program I went and cut a big bunch and have it drying now. I have heaps as well and it is doing particularly well this year, great in everything fresh. The rest gets chopped back and into the compost so nothing is wasted.

It's edible but the flavour isn't as good as the ordinary kind.
