you sure can. Found this recipe:

Recipe
Makes approximately 5 TB
1/2 Cup fresh oregano
1/2 Cup fresh basil
2 Tb parsley
1/4 Cup pistachios
2-4 cloves of garlic
3 tsp fresh lemon juice
3-4 Tb of olive oil
1/4 Cup of grated parmesan or asiago cheese
salt to taste

Same, I gave mine a big haircut, chopped it up and froze it.

Noted ( I think was J Oliver in Greece) how he constantly had this dried bunch of Oregano and everytime he needed some he just took some of as if one was using a pepper grinder style, that is holding the dried buch and sprinkle some into the dish he was preparing, caught my eye this bit, interesting in the use of dried herbs that one would had prepared earlier.

That's right Valentino.Oregano (and marjoram) are among the few herbs that have a good flavour dried as well as fresh.What we grow in NZ as Marjoram is actually closer in flavourto Greek Rigani than our oregano is.

I hang mine upside down in a brown paper bag inside the hotwater cupboard.

After watching that program I went and cut a big bunch and have it drying now. I have heaps as well and it is doing particularly well this year, great in everything fresh. The rest gets chopped back and into the compost so nothing is wasted.

I have a variegated oregano growing - are the variegated type edible, does anyone know please - thanks.

It's edible but the flavour isn't as good as the ordinary kind.
