Smoke House

Not exactly a recipe Im after but sure it's related.Just got a smoker and will be smoking fish, chicken etc.What is the best type of wood to use.Manuka is the common type but is there any other to use that is easy to come by.Do you also use the leaves to get a good smoke.How long do you have the food in the smoke.TIA

At Mega Mitre10, they have a stand with all the bbq items, including the cedar and hickory chips etc...it is an American Brand, the name escapes me though.
