I was asked for my recipe in the Gardening thread so have copied and pasted:
This is the recipe I have been using for 40 years or so- it is an adaptation of Alison Holst's recipe from one of her Kitchen Diaries years ago- it is really quick, simple, and come out crunchy every time.
Pickled Gherkins 2kg small gherkins- preferably freshly picked( cut up if large before salting) 1/2 C plain salt
Bay leaf Fresh dill ( can use dried if no fresh available) 2 C sugar, ( can use less depending depending on taste 4 C water 3 TBSP ( 45ml) Glacial Acetic Acid ( from chemist)
Wash and scrub gherkins if muddy ( a grower told me years ago to do it in the washing machine- tried it the odd time and it does work, sp. for large quantities.)
Sprinkle the salt over the clean gherkins and leave for 2-3 hours, stirring occasionally.
Drain off the brine, and pour enough boiling water over to cover the gherkins.
Bring the sugar, water and glacial acetic acid to the boil- simmer 2-3 minutes. Turn off heat.
Pack hot drained gherkins into hot sterile jars, adding some fresh dill and bay leaf to each jar.
Seal with boiled lid.
I use old dolmio jars or similar as they make a good size for use. Seal should be popped down. ( turn upside down till cool)
Using this method, always comes out crunchy.
