Roast Pumpkin Hummus 600g pumpkin, peeled, deseeded, & cut into large chunks 2 cups cooked chickpeas (I used 1 can) 2Tbsp tahini 1 tsp ground cumin 1 tsp ground corriander 1-2 tsp chilli sauce (I used homemade sweet chilli) Juice of 1 lemon 4 cloves of garlic 1 tsp sea salt. Lightly drizzle pumpkin with oil and roast until tender - black bits are ok. When cool - chuck in the food processor with other ingredients. Blend until smooth. Its quite garlicy (which I like) but it is raw garlic so you may want to add a bit less if you dont want to scare everyone away lol

I just use sesame oil instead of the tahini (mainly cos when I first started making it my local supermarket didn't stock tahini - and I like the sesame oil..so don't know any different lol)
It freezes well too :)

scottdaddy, this is the recipe that I use, except that I almost always use home cooked chick peas, and I take the option of not using the parsley, and sometimes not the paprika either......
HUMMUS 2 cups canned garbanzo beans/chick peas), drained- 400g drained weight ⅓ cup tahini ¼ cup lemon juice 1 tsp salt 2 garlic cloves, halved 1 tbsp olive oil 1 pinch paprika 1 tsp minced fresh parsley, optional
Place the garbanzo beans/chick peas, tahini, lemon juice, salt and garlic in a blender or food processor.Blend until smooth.Drizzle the olive oil in and blend until just mixed. Transfer the mixture to a serving bowl.Sprinkle, if desired, with the paprika and parsley. Makes 2 cups.:-))

I use tahini because I've got some, but it is the most expensive ingredient. I have seen recipes for hummus without it, and also the hummus being made this week on "Food in a Minute" on TV does not have any in, so you can save money by leaving it out.

245sam's recipe is similar to the one I use but forget the paprika and parsley and add cumin and coriander. Lots of garlic and if no lemons then 'Berri' lemon juice. If you cook you own chickpeas makes a huge difference to cost and also cooked chickpeas freeze really well. I soak them and then cook but Alison Holst's recipe using a crockpot says that soaking isn't necessary. Lots of salt for taste (oh no...salt police alert) and as you process keep tasting until it's how you like it. Freezes well too. I use it alot sometimes to replace butter. You can add lots of things for different tastes such as sundried tomatoes, tapenade (olives), finely chopped pickled garlic and whatever you find in your fridge. I make a 2 litre ice cream container full and figure it costs out at about $4. Once you make it you'll never buy it again.

Forgot to include that I drizzle the oil whilst the processor is running and I also add some of the water chickpeas have been cooked in which saves on not only cost but also so much oildiet-wise. I think it gives a fresher flavour rather than so oily.

I'd love to try it with tahini - wonder if it makes much difference?
Would def use 'something' sesame though - just wouldn't be the same without any sesame flavour :)
And sesame oil seems to add flavour to sooo much other foods that I cook - love it :)A little wee drizzle/drop goes sooo far :)

I use peanut butter instead of tahini and it tastes yum. main reason is our supermarket never used to stock it. chickpeas, peanutbutter, lemon juice, oil, garlic, salt and pepper. then just add anything else you want for diff flavours. you do use quite a bit of oil, so as someone else said add some water instead if you want to be a bit healthier.

300g can Chickpeas well drained 2 cloves garlic, crushed peeled and chopped 1/2 tsp salt and cayenne pepper 2 tbsps extra virgin olive oil juice 1 lemon
Blitz in FP. Easy and yum! I always use hulled tahini or make my own and like lots of lemon and garlic and garnish with paprika and ev olive oil and lots of pita bread
