On NZ Masterchef last night they had to do two signature dishes of a famous NZ chef (that I'd never heard of) ... basically a tripe curry and a rolled pav! ! Who thought anyone in the world still used tripe! ! ! ! ? ? ?

Gross, ever seen a restaurant serve the stuff either?
ANd picking on that guy cause of his plate was pathetic, they could have tasted it and marked him on that as well instead of being so precious about the appearance.

he is a very well known chef and resturanter, the fact that you dont know who he is, is not reflection on this or his talent - i think its amazing that you can make tripe yummy, takes a gifted person to create a recipe to make it yummy! ! !

Tripe is very versatile and can be cooked in many ways . I don't have specific recipes and don't cook it but have had it as curry, sweet and sour, crumbed like schnitzel, with a filling and rolled like beef olives with flavoured tomatoe sauce, mince and done as croquettes, used as a layer in a vegetable stack, in a stir fry, as casserole type dishes with different herbs and spices. The only way I couldn't eat it was the traditional way of tripe and onions. There are tripe clubs in many places and that is where to go if you want to try it in different ways, that is where I got to like it.

I love offal, especially liver and kidneys. I also enjoy black puddings and white ones and love haggis . . but tripe ... just the look of it puts me off even thinking about ever trying it. Good to hear some people like it though I guess.

Try asking at the various information places near you, they usually have contacts for clubs and groups.

lizab, you are my sort of person! ! I love most offal but tripe is not on that list. I tried Haggis a few years ago but my hubby didn't like my 'haggis breath', and nothing can beat a good black pudding! ! !

I like haggis and used to like sheeps brains when I was younger and liver. I've never tried tripe but my father used to like it cooked in a white sauce with onions.

Has anyone ever heard of a recipe for meatballs using tripe, sausagement & Bacon? Mum had them years ago and is keen to find a recipe again.

Depends how you look at it.
I know in it's green state, it's very good for you, it is a natural probiotic. It is higher in fat though, and people eat it white rather than green.
It's amazing for dogs, can cure sensitive stomaches and itchy skin.
