Give me yur bestest recipe...I've never made it, but am keen to give it go... I don't want anything too rich.... kinda light in colour... I'd be so grateful!!!!

This recipe is the BEST cake I have ever had and it is made in one of the wooden cake boxes. It is moist and very tasty and I am not usually a great fan of Christmas cake.
* 2kg mixed dried fruit * 500g butter * 500g brown sugar * 1 Tbsp golden syrup * zest and juice of 1 lemon * 1 tsp mixed spice * 1 tsp cinnamon * 1 tsp curry powder * ½ tsp salt * 125g chopped blanched almonds * 1 glass brandy or rum (200 ml) * 2 Tbsp cornflour * 8 eggs, beaten * 500g flour * 1 tsp baking powder * 1 tsp baking soda
Put fruit, butter, sugar and golden syrup into a large saucepan and bring to the boil, stirring to stop the mixture burning. Add lemon, spices, salt, chopped almonds and brandy.
Stirring continuously, simmer for 10 minutes, then add cornflour. Mix well and remove from heat. Leave to cool thoroughly.
Beat eggs. Sift flour, baking powder and baking soda, add alternately to cooled fruit mixture. Bake in the middle of the oven at 160˚C for 30 minutes. Then 120˚C for 4 hours. (Cooking times may vary depending on the oven.) Cool in the box

Hi clair, thats for the 26cm one. I think I can get the recipe for the other sizes if you would like me to? babytears, if you can get a wooden one, you wont be disappointed, they make THE nicest cakes and are so much easier than having to wrap a cake tin in layers of newspaper. But I am sure you could make it in a 26cm metal tin, just wrap the outisde well with layers of either newspaper or brown paper.

Perhaps I could use the full recipe and split it into the 2 sizes that I already have.I give my family a cake each at xmas time and usually use the recipe that came with the box, but not sure if it is much different as I have them packed away.

The best fruitcake I have ever tasted was a Christmas cake made by Audrey Crowe (mother of Jeff and Martin) and given to me by my then manager.It was dark,moist and jammed with fruit,delicious.

Here you go Clair - this is for the 20cm Cake Box
Christmas Cake recipe - 20cm Cakebox

alison's cutting cake from simply delicious 1975 1.5 T cornflour 1 C water 450g sultanas 225g butter 1 C sugar 1/2 t lemon essence 1/2 t orange essence 1/2 t almond essence 1/2 t vanilla essence 3 eggs 3 c flour 2 t baking powder 1/2 t salt Boil cornflour and water until thick...cool. Cream butter suagr and essences, add eggs. sift flour, baking powder and salt and coat sultanas in it. Add the flour etc in batches alternating with the cornflour mix. Turn into a lined tin ((20cm square, 23cm round) bake at 170C for 1.5 hours (ish) *this cake is very similar to the ernest adams fruit luncheon
