I need to fill the lunchbox baking tins... . Easy, nice, tried and true recipes please! Ones that YOU use regularly with success!

Ginger Walnut Shortbread (also very good with pecans)

2 c flour
200g brown sugar
1 tab ground ginger
1 tsp baking soda
250g butter
100g walnuts chopped

Mix all but walnuts until crumbly and starting to clump. Add walnuts and press into Swiss roll tin.

Bake 160 C 50 – 60 min. Cut while warm.

Can you make this without any nuts? Severe nut allergy in school.

Italian Polenta Raisin Biscuits

2/3 c. raisins – soak in warm water 30 min then drain well
125gsugar
rind of 2 limes (or one lemon) – peel off with vegetable peeler
220 g butter
3 egg yolks
170gwhite flour
140gfine polenta
1 tsp baking powder

In food processor whizz lime peel and sugar together until peel is finely grated. Add butter and whizz until creamy. Add egg yolks and whizz.

Sift dry ingredients together and add. Pulse until just mixed.

Turn out on board and gently knead in the raisins.

Using plastic wrap form into two logs approx. 3cm diameter. Wrap tightly in plastic wrap and either chill at least one hour or freeze.

Cut into 1 cm inch slices; bake at 150 degrees C for approx. 20 min. or until pale gold.

I think it would be nice with some sort of dried fruit instead of nuts. Maybe dried cranberries, which are not too sweet.

Chocloate Crunch ... (ie; homemade meusile bars)

Melt 150 grams butter and then add all the next ingredients

1 C flour
1 C coconut
1/2 C brown sugar
2 T cocoa
1/2 t baking powder
1 C rolled oats
2 T golden syrup

Mix well then cook on high in microwave for 1 min.
Stir then repeat this step twice
Presss into a flat bottom contained and cook on high again for 2 mins.
Cover with papertowel while making chocolate icing.

I also add sultanas to this, occasionally choc chips ...
it's way cheaper and nicer (no additives) than the store stuff

Make mini pizzas by splitting pita bread in half, top with favourite topping, bake an quarter.

I think you may find the ginger walnut a little strong for young palates. Perhaps try a few easy keep ideas and alternate them so they dont get bored with them. Use med muffin tins to do small mini quiche or bacon and egg pies. Keep a cool pack in their lunch box or bag to keep the food fresh and cool. Small sausage rolls and small triangular sandwiches are always tasty foor small mouths.

We bake every Sunday to fill the lunchboxes for the kids school and daycare lunches. I freeflow freeze everything these days, each morning I take out a treat and by morning tea it has thawed. I mostly bake muffins, cupcakes, biscuits, bread basket b & e pies and cakes. The kids also love leftover sausages, cruskits, cornthins, fruit, yoghurt, raisins etc. If you would like any recipes let me know :o)

Easy weetbix/sultana loaf (makes 2)

Easy recipe that makes 2 medium loafs.

In a bowl add all of the following -
8 weetbix (I use 120gms of weetbix crumbs that I save up form packet ends),
100g chopped butter,
2t baking soda,
1Tgolden syrup,
2c sugar,
1t mixed spice,
1-2 cups of sultana or any other fruit (eg walnuts apricots, dates)

Then cover with 2c of boiling water and soak for 5mins

Add
2 beaten eggs and 2c self raising flour.
Bake at 160 for 40-60mins.
A beautiful loaf that keeps well

I have sliced this and buttered it and wrapped it in portions for lunches and my girls (and me) love it, really moist.
I have made it with mixed fruit, sultanas and I have some apricots in the pantry for my next batch.

My version:

As I do not like very sweet things I have cut the sugar down to 80g and added a pinch of salt, nutmeg and chilli.

I guess you could cut the sugar out altogether and add some cheese instead.

I use freshly milled wholemeal flour, so the structure is different to white flour.

This is the original recipe:
