I am also one who doesn't use sugar for me its bay leaves, malt vinegar and a few cloves. Maybe some rosemary too.

Maple Syrup. Husband used to use Golden Syrup but I changed it to that and he likes it. Personally I can't stand corned beef at all.

I roast mine with Wholegrain Mustard mixed with olive oil (sometimes a little bit of crushed or chopped garlic ) rubbed all over and allow to sit for an hour plus prior to oven. Covered with foil in a slow oven for about an hour and a half then up to a moderate heat with the foil off for another hour thereabouts... simply lovely. Oh, I prewash the silverside prior to the rub. Similar to Pickled Pork.

i usually do the golden syrup and malt vinegar thing with a few veges that are discarded after sometimes orange peel. this time i was lazy and just did water and it was still great! made me wonder why id bothered all this time hehe!
someone on here does it with gingerale which i would love to try

Mix is usually 50 - 50, that is say a couple of tablespoons of each mixed together and as noted sometimes add say a tablespoon of chopped garlic. Also a bit of freshly grounded black pepper is another that can be added.
The secret is allowing the rub to work before cooking.

my meat goes straight in to the slow cooker with 1 tab vinegar, 1/4 cup brown sugar & 1 heaped tspful of grainy mustrad. I throw in the carrots then too. Turns out perfect every time. I use my slow cooker out in my back porch so it doesn't stink the house out as it cooks!
