I dig up some taro from my garden (they are better with real yams if you find some - not the nz oxalis type) and grate them, then add some flour and a few eggs, half a very finely chopped cabbage and some salt.
Into the frypan go either some shrimps (about 5 - 10 per pancake) or some pre-cooked pork pieces. On top comes a thin layer of the above "pancake" batter and it gets fried for a bit, before flipping it over (and it is easier to quarter it before flipping! ) garnish the top with some more shrimp or pork then turn over and finish cooking.
Serve with mayo, some okonomiyaki sauce (available in most supermarkets nowadays) tuna flakes and/or dried shrimp over the top.
You can also make a western version no doubt by adding chives or parsley over the top.

Thanks uli, I never thought of Taro or yams. No such thing as Okonomiyaki sauce in our remote area! !
Not those little knobbly red oxalis tubers - they sell in NZ as "yam"

(1) Sift 3/4 cup of plain flour, add about 1/2c of water and 1 egg. mix gently until smooth but dont over beat or will be tough. Add 1c chopped cabbage and set aside. (2) finely chop half an onion and other toppings (i would google for what you can use - bascially all sorts - you have meat and vegetables, usually pork and then maybe chicken or seafood. also often corn, spring onions. use about 100g of meat). (3) heat frying pan to medium hot, use about 1T oil, cook until (2) heated through and the meat almost cooked. (4) put into round shape (sort of bread and butter plate sized) then pour batter on top). (5) cook about 4-5 mins then turn over. If usng seafood put on top when you turn it over. (6) cook for a few more minutes until batter cooked. (7) drizzle with okonomiyaki sauce (from new world) and japanese mayo (diff from nz mayo) - ive even seen these at the dannevirke new world so you should be able to find them. You need them, it is a major part of the taste. The japanese mayo is kewpie - with the red lid. google for how it should look. also try to get bonito flakes and seaweed for topping (aonori) - it's not normal sort of seaweed tho like what you use for sushi. This is for Osaka style (the best! ! ) okonomiyaki. "modern"yaki is when you use do the first bit and try fry thin noodles(like soba) and then pour on the batter so it all cooks into the top. so yum! There is also hiroshimayaki. They make like a crepe really thin, then an egg, and sandwhich the fried noodles and toppings between the egg and crepe. not as good as osakayaki, but ok.

no, because she asked for new zealand style. you can hardly notice the difference without it. but feel free of course to post your more japanese version if you wish. You can also use okonomiyaki flour which you can get from New World and that has yam powder in it. And #1 - give takoyaki a try too!
