You could make curries and serve them with flat bread.
Chicken breast wrapped in bacon baked then served on mashed potato with a nice sauce (even melted garlic butter). The bacon keeps it moist.
Diced chicken cooked with white wine, cream and a dash of mustard wrapped in filo pastry like pasties or even in filo baskets.
ferita im gonna give the chicken breast wrapped in bacon a go tomorrow so i have some quick questions please... do i need to fully enclose the chicken in bacon? or just wrap a bit around it but still have the ends free? how long and what temperature do i cook it for? and can i put some flavouring on the chicken between the bacon and the chicken and if so what would you recommend or is it ok as is? thank you :)

This looks like a nice recipe for it http://www.foodshow.co.nz/index. cfm/Recipes/Simon_Holst/Baco n_Wrapped_Chicken_Breasts
You can add flavouring, perhaps some herb butter or garlic butter between the bacon and breast. The bacon keeps the breast moist

wow that certainly looks worth the effort~! I like the fact you make it in advance too. Not that it's something I'd serve my family but definately for friends as a treat

its not actually that much effort to make, was really easy (and im a useless cook so it really must be easy if i thought it was lol) and the chicken was just done to perfection yumyum! !

The trick is to make everyone think it was difficult :) that way they are more impressed when you serve it up ! !

Thanks for bumping this thread for me. I made 4 of them tonight, they are very big, one of them almost enough for two. Very tasty and will be able to whip the next lot up a lot quicker. By the time the chicken was cooked the bacon was getting crispy which was not a bad thing really. Maybe I will try cooking them slower next time.
