Croquettes

what are your favourites. I am making curried pumpkin croquettes later.

Kumara Croquettes
4 med kumara . . 225g can crushed pineapple. . 2 rashers bacon chopped. . parsley. . 2 eggs. . 2 tbsp pineapple juice. . 1 tbsp cornflour. . 1tbsp water. . 11/2 cups dried breadcrumbs. . 1 tsp ground cumin. . 1/2 tsp ground chilli. . 1/4 cup oil. .
Boil and mash kumara. . Chop bacon into small pieces and mix into kumara with parsley and adding one of the eggs. . Mix in pineapple.
Add reserved pineapple juice if too dry. . Beat 2nd egg cornflour and water together. . Shape kumara mixture into oblong shapes. .
Mix bread crumbs and spices together and dip croquettes into egg mixture and then breadcrumb mixture...
Put oil in baking dish and roll croquettes in oil, bake 200degc 20 mins or till golden... .

Bacon, Cheese and Onion Croquettes. .
2 cups fresh soft breadcrumbs. . 2 spring onions. . 1 cup grated cheese. . 3 rashers bacon. . 1/2 tsp salt. . pepper. . 1 cup dried breadcrumbs. . 1 egg. . 1 tbsp water. .
Add sliced spring onions to soft crumbs, add cheese. . Mix in diced bacon and season. . Leave in fridge to cool. . Shape as required. .
Beat egg and water, dip in croquettes then roll in dry crumbs. . Place in fridge to help set and then fry in butter/oil...

I will post the pumpkin ones after I make them, coz I won't post something I have not made, good to go. I never add to many things to such things. off to get started

I have my Mum's Dutch recipe for meat croquettes if anyone wants it.

Meat croquettes, bit fiddly, but so lovely.
My Mum used to cook up shin on the bone in a little water till tender, cool and then take all the meat off the bone. She used the water off this as the stock to make the sauce for the croquettes.
Approx. 500gr shin on bone, cooked and shredded finely. 4Tbsp melted butter, 4Tbsp flour, egg, 1/2 chopped onion, salt and pepper, 1 cup stock (use the water off the shin on the bone cooking) breadcrumbs, oil for frying.
After cooking up the meat and cooling and shredding the meat off the bone, add flour to melted butter in a saucepan, stir until the mixture has a dark brown colour. Add stock gradually, stirring to make a smooth brown sauce. Keep stirring for around 10 minutes. Take off heat. Add cooked meat and onion, mix thoroughly and season to taste. Add beaten egg yolk. Pour mixture into a flat casserole dish and refrigerate overnight till very cold and set. Next day, divide into portions, shape into croquettes. Beat another egg and add a little water. Roll each croquette in egg then in breadcrumbs. Deep fry till golden brown. Lovely for lunch with fresh white buttered bread.

that would be nice , stormbaby. Croquettes are not very popular are they. I rather like freezing veges ready to heat and eat, these days. I took up outdoor bowls, lol . I have to prioritise. Nothing wrong with freezing meat ones.

Stormbabythanksfor the recipe! When I was a child we had Dutch neighbours who made these and I have always wanted to try to make them as they wereso delicious . Mmmmn !

Mum used to make them all the time. You can get them here in Chch in a few Dutch cafes too, but they were never quite the same. Enjoy! PS I have the Oliballen recipe too.

curried salmon which I have done a few times, but not in a long long time - they are quite tasty- a bit of a fiddle to make, but nice. Have the recipe at home.

stormbaby you can add chicken or fish as subsitutes for the meatWe are from Holland also. Nice in a fresh bread roll yummy most serve it with mustard

Two days on and they are not finnished yet. I cooked 2 kg of pumpkin , 2 large onions , salt, pepper and 1 tsp curry powder. I kept the liquid to make a roux , starting with 50 grams of butter and 1/2 a cup of flour. To this I added the moulied veg's, untill it was of the right consistency. thick porridge. I tasted and adjusted the seasoning, added more salt, pepper and 1/2 tsp more curry powder. Today I will roll the mixture into small balls, [ 1/2 golf ball size] and pop them into the freezer. To finnish them off, once frozen I will put them through a very thin batter and bread crumbs, and refreeze them. These will be cooked in hot oil from frozen.
The remaining pumpkin was added to the reserved liquid, pumpkin soup.

Roux, that was the word I was after. Mum used to make the roux sauce with the croquettes. I used to make them with smoked fish (from the can) and deep fry them, yummy. Croquettes are underated! My Mum used to make them very occasionally for me to give to my boss, unfortunately a few didn't make it!

yes they are ... . stormbaby... . , We are all getting very conscious as to our calorie intake, they are a bit up there. However for convenience sake they are an interesting way of making your own fast food type meals. The pumpkin ones I came across at, a finger food supper. They were gone in a flash.
