Kefir users, info please

I am keen to learn about water kefir and milk kefir - are there any users out there and can you shed some light on the crystals, thier uses and the benefits?

I've been reading that for the past few days... . now I am trying to source some kefir grains that haven't been fed with homog milk... . the hunt begins!

I might be able to help there maxwell ... but I live quite rurally so it might take a few days/week/... before I catch up with the woman I have in mind.
She has a milking goat so definately untreated milk but would the goat factor be an issue for you?

Winnie. . your a gem! , I'd have to read up and see if a goat kefir can be converted to a cow kefir? from what I have read so far dramatic changes can cause problems. . but I will seek out more info on that (or if anyone else straying in can shed some light on that it would be good! )

I saw a lady on the net who is living 'the sustainable life' up north. She sells kefir chrystals and all sorts of other cultures.

There is unhomogenised milk for sale at the supermarket - the Farmhouse by Meadowfresh and one by Naturlea if thathelps.

I'll have a look-see at the site you listed - hopefully it can shed some light on it all for me!

and thats the milk I drink. . I just dont want any grains that have been grown with homog milk as have read it can change their structure and DNA.

I use use kefir granules all the time and go to a lot of trouble to get raw milk for the process. I could rave for hours about kefir but haven't got time and anyway it's all been said before on Dom's website as in the above link. One thing I will say though, is that the very best way to make it, IMHO, is using the 'pouch method' as described on that site. I find it does better when not squeezed and pushed around as in straining methods. I use a bag made from the red plastic net that garlic and shallots come in, with a knot tied in the top but leaving lots of room for the granules to grow. It's important not to use a fabric which is closely woven or one that has holes big enough for the granules to get through. The red plastic netting is exactly right. After 24hrs, or more in winter, just lift the bag into a container of new milk and store the completed kefir in the fridge. Yummm mmmmmmmmm

Is there anyone in the Manawatu/Horowhenua region that has some Kefir grains? I can buy or barter them for some fresh clean rendered Lard from Free Range pigs. Cheers
