Years ago we had this most delicious meat often. I went to buy some recently and find supermarkets dont seem to sell it. I finally found a corned tongue at a deli/butchery but i am sure the ones we used to get wernt corned. . I didnt buy it as i was unsure if it would be the same and the price was horrendous for what was once a throw away cut. Can anyone advise me if i am right or were the tongues 20+ yrs ago corned as well? , , thanks John

havent seen them in yrs. Asked my son (butcher) and he doesnt get them at work. same forox tails, he got me one, and the price was $16, not that I had to pay for it

As pericles says the butchers don't get them as nobody wants it. I get my Butcher to order me one, Not cheap, Love it cooked in crock pot and pressed ask your butcher if he'll get you one.

Our Butcher corns them himself . . the taste aint the same as the old way though... . bacon, corned beef , picked pork, pickled chook, and pickled lamb , as well asox tongue have changed , no where near as tasty ! ... ... ... . the brine is injected now instead of the brine-bath soak, one of the ingredients has been reduced or cut right out I believe for health reasons... ... .

they cut out the saltpeter from the brine
Ox Tongue this is the recipe l use and it is nice
soak tongue overnight in water l put mine in water about 5pm and then change it before going to bed
Next day pour off water
Put an onion and a few cloves, 2 bay leaves and tongue in a pot with cold water cover and simmer for 3 1/4 to 3 3/4 hrs till cooked and keep topping up with water as needed
Put tongue in cold water to cool, skin, then cut in half lengthwise and put in a circle tin and some of the cooking liquid (recipe below)if you want and put a plate on top then a weight on it
300mls of cooking liquid reduce to 250mls pour over tongue

We always had corned ox tonge distinctly remember Mum cooking it when I was little so well over 45 yrs ago. Definately corned never had an uncorned one sounds nice. Yeah all the things I like that used to be cheap are now expensive Oxtail(the butchers used to give them away) lamb shanks, liver, kidney, all disapeared or expensive I used to buy whole ox livers for 50c each.

I am same age group Pericles and am sure they were not corned. But then we never had super markets then either. Just the friendly local butcher

Apparently you cant buy tongue anymore due to the antibiotics used in cows . Our butcher gave us one as he wasnt allowed to sell it. gosh it was nice though. Cooked it like corned beef. Delicious. :)

Mmmm odd, I get one here if ordered, butchers tell me lambs tongues are not allowed to be sold anymore. With you there Pericles years ago they were never corned, infact today the ones i get arn't either.

Lets know how you get on am interested to hear. They say were a bit behindin the deep south lol, but it should be one thing for all i recon. Maybe because were very strong in dairy farming here they are more readily available, or my butchers not up with the latest. I had a older SIL in the summer months always cooked one religiously every 2 weeksin Otago and had no trouble getting them.

Excuse me l don't know where the butcher is importing his tongues from because as a farmer any stock treated with anything can not be slaughtered until out of a given withholding period and the fines if you do make a mistake are crippling so you can be assured that no NZ beef or lamb has any residues and they are regularly tested and there is full traceability back to the farms as we spend hundreds every year tagging all our stock and nothing can leave a NZ farm with out said tags and paperwork

well I asked my son. Yes, you can get ox tongues, corned or plain. They sell for around $10 each. So that's going to get cooked, as soon as he gets one. They are few and far between. He said they only get one every few weeks.

Dang now I have to find an uncorned tonge I've never tasted one asked my older sister and certainly the ones we had as kids were definately corned. So when I get one are they cooked the same way as in simmered until the skin peels easily then pressed while setting.

Just dont do what I did as a new bride 40 odd years ago. I cooked the tongue and so called pressed it but silly me didnt realise you had to peel the skin off it. Tried to slice it and eat it. Didnt taste good at all. One of the lessons of cooking something that I didnt know alot about.

I remember being able to buy them, common as muck when I was a kid. Mum would also buy them in a can (for when we were camping). Funny how people turn their noses up at "offal" these days ... oh and brains~! boiled and mashed with butter/pepper/salt served on toast. Flashest way I had them was with orange and capers at Dr Duddings years ago in Takapuna ... mmm gee I love food!
