He's a bit odd but I like his outlook and food so thanks for the reminder I like the foraging aspect and do a little myself eg Watercress, dandelion root coffee but also seafood and game like rabbits, wild goats etc.

Its easy dig up the roots of big dandelions they are like miniture parsnips though scraggly looking wash them well then slice into thin pieces across the grain spread on pbaking paper and leave in a warm dry place for a few days to dry. throw them in the food processor and whiz up to fine granule and toast lightly in a dry frypan don't burn them too much. I use as filter coffee in similar quantities and soak time.

Great thanks, will give it a go when I go to my parents, they have 20 acres to play with - dont have any dandelions in my wee patch.

How interesting, thanks for posting that beaker59. I often wonder how these methods evolve - who originally figured out that dandelion roots could possibly be turned into a hot drink.

Another way was used here.
Dried the roots whole. Baked brown in oven and the ground in a coffee grinderwhen cold.
I grew rows of dandelions in my vegetable gardemonce apon a time and people laughed at it because they thought I didn''t know it was called a 'weed'. Yet the inner leaves sre good in a cheese sandwich or steamed food as well as the roots for drinks. V
