of course! make Gnocci, which are a potato pasta. Dump the mashed potato on the bench, add 1 egg and about 1/2c plain flour. Mix and soften with a little oil if you need. Add water to make a softish dough. Roll in to long thin sausages and cut into 1 inch lenghts. Will keep in fridge for the day covered in gladwrap. Boil water with a little salt, add gnocci and cook till they float. Do in batches. They will only take 2-3 mins to float up. Stir through your favourite pasta sauce... eat!

Mexican Mince and Potato Bake
•1 teaspoon olive oil •500g beef mince •2-3 cloves of garlic – finely sliced •1 green capsicum - chopped •1 yellow capsicum - chopped •8 spring onions (2 bunches) sliced •3 small-medium tomatoes – chopped •1 teaspoon chilli powder •1 tablespoon ground cumin •1 teaspoon garlic salt •1/2 teaspoon black pepper •1/4 teaspoon salt, •3-5 large baking potatoes, sliced thin, •3/4 cup grated tasty cheese. Preheat oven to 180°C. In a large pan, heat the oil, add the mince, capsicums and spring onions. Cook, stirring as needed, until the mince is browned and the vegetables are softened. Add tomatoes, spices and salt, cook, stirring as needed until the flavours are blended, about five minutes. Arrange layers of the potatoes and mince mixture in the baking dish. Cover with foil and bake 30 minutes, uncover and sprinkle evenly with the cheese. Bake until the potatoes are cooked through and the cheese is melted, about 10-15 minutes longer.

Mix it with spring onions and cooked cold cabbage and fry in butter and oil. When it is golden and crispy, turn over and brown the other side. Make a hole in the mixture and crack in an egg, cover and cook until the egg is done. Shake on plenty of tomato sauce.
This is the only meal my brother can make and it sustains him whenever his wife is away. Sad really.

Leftover mashed potatoes 1 onion 1 egg 1 cup grated cheese flour butter salt and papper Combine potatoes, onion, egg and cheese. Shape into large size balls and roll in flour, then flatten into patties. Melt butter in frying pan and brown for about 5 minutes each side. Salt and pepper to taste... ... make sure you roll in plenty flour so they don't stick to pan

The fishcakes add a tin of salmon or tuna, spring onions, seasoning shape and roll in parmesan cheese and colour on the grill yum.
