Going down this thread reminded me of how recipe's used to be. I felt rather blah! like. It was sickly sweet lol.To think the super Soupier business woman/baker/cook/preserver/jam- maker/poultry farmer/wife. and so much more unmentionable stuff. didn't bother to chip in.

waves to pickles - how is the vinegar brewing doing? Another "Eaton Mess" maybe?

Ha. No. I've never made it and I don't think I've eaten it either. It's probably quite nice when made with lots of berries, lots of double cream and only a small quantity of crisp meringue crumbs.

was that a necessary addition to a thread where you say it reminded you of how recipes used to be . mixed messages there, pickles.

I don't make it now as I don't use very much vinegar any more. No Eaton mess for me any more, my taste buds have been retrained.

I have never made it because, basically, I have never developed a taste for meringues. They are right up there with kremelta, loads of sugar & cocoa powder rice bubbles, pink wafer biscuits with nasty sweet filling which makes my cheeks suck in and eyeballs go cross eyed and bought Neopolitan/rainbow cake.
However, A guest once insisted on making dessert at my house. I cooked the most amazing meal which I would have finished off with a beautiful lemon tart or just fresh strawberries & brie but instead I was faced with this god awful mush that had a similar effect on me as pink wafers stuck together with sweet white stuff. How anyone can actually eat Eton mess voluntarily is beyond me but they do. It takes all types I guess and it is not for me to judge.

I agree, I've tried it, when some one has made it (or one of the few variations) & it wasn't to my taste, too sweet for me. When I had 20+ people for lunch last Sunday, the desserts were fresh fruit salad, lemon/lime tart, fresh berry tarts & home made lemon ice cream. All a bit on the 'sour side', but it went down well. However, as you say, just because it's not to our taste, we shouldn't judge an Eton Mess type dessert, if others like it. Each to their own & let's face it, surely it's not an 'every day' dish . is it? Christmas & maybe special family occasions, surely? Hope you have a great Christmas . with family & friends & whatever you serve them will be delicious.

Any nice Eton Mess recipes out there, I think I will add it to my Christmas dessert list?

Broken meringues, sliced strawberries, whipped cream. Fold it all together. Serve

This. Don't sweeten the cream, or it's just grossly sickly.
It's not uncommon for people to add icing sugar to cream when it's going to be a dessert topping, or a filling for a not-very-sweet cake.

It isn't necessary in Eton mess since you sweeten the strawberries and meringues are sweet already - icing sugar can be added to prevent splitting

It's a kiwi thing - I would never do it but I know it is common here. I grew up in UK and had never heard of it there.

Exactly.
Except I wouldn't sweeten the strawberries either. It's not needed.

It brings out the flavour - sugar and balsamic vinegar is even better

I do sweeten whipped cream a little, with a tiny drop of vanilla essence; otherwise (to me) it just tastes like flavourless fat.

SO more ambrosia than Eton mess then?

I think Eton mess and ambrosia. are virtually the same you use the same ingrediants

Whoops I do what my mum always did a touch of vanilla essence and bit of icing sugar for creaming my pav.

We don't mix ours up . just chop up ice cream, chopped strawberries and crushed meringue over, blobs of whipped cream. This year I'm adding some Eskimo ice cream bars, just to add a little choc to the mix. We make this for the kids, of whom there are many, every year and they love it.!

Not traditionally, at all. Ambrosia traditionally doesn't contain meringue or strawberries, and only sometimes cream (which are the only ingredients in a traditional Eton Mess). It's mandarins, pineapple, coconut, marshmallows and optional sour cream or yog (or cream).
