Due to not keeping a eye on them and going away they have turned into c.40cm marrows. i am on my own - what can I do with them?

I found a fantastic chocolate zucchini cake recipe once. Really moist and lovely - would need to google it though. Also lots of gluten free recipies call for "spaghetti" made from ribboned zucchini and other vegetables.

Cut length ways, scoop out, mix with chopped onions, herbs, spices, veges, mince if you like, cheese if you like, put stuffing mix back in, bake.

letitia, IMO the edibility of the skin of marrows depends on whether the marrows are still green (i.e. unripened) or fully ripened (as older marrows are). We enjoy the green/unripened marrows simply as a vegetable so when we have stuffed marrows I usually use the older marrows and we then don't eat the skins; however don't peel the uncooked marrow if stuffing it/them as the skin is essential IMO as a 'holder' for the marrow flesh and its stuffing. :-))

This is the recipe that I always use for a Chocolate Zucchini Cake, lovely and moist, very like a mud cake and so easy as made in the MW. I have also made the recipe into muffins too. 125g butter 3/4 cup sugar 11/2 cups grated zucchini 2 eggs 1/2 teasp each cinnamon & mixed spice 1/2 cup choc chips 3/4 cup cocoa 11/2 cups SR flour 1/4 cup plain yoghurt
Cream butter & sugar, add eggs one at a time and beat in between each egg. Add spices, zucchini, choc chips & yoghurt & mix well. Add cocoa and flour and mix. Put mixture into a prepared microwave cake pan. Bake in microwave on high for 8 minutes. Stand 5 minutes before turning out onto a cooling rack.

My mum would often make stuffed marrow (bacon, onion, mushrooms, breadcrumbs, cheese was popular) and always peeled the marrow first, cut into thick slices across the marrow (so rounds 3 or 4 cm thick) and scooped out the seeds. She then baked them and served with a cheese or tomato sauce.

sarahb5, I can understand your Mum choosing to peel the marrow for the way she cut and stuffed the marrow; however if stuffing the halved marrows I do not believe that peeled marrow would work as it did for the sliced marrow, but thanks for the idea re the marrow stuffing combo' that your Mum used - I can indeed believe that it would have been a very popular mix and must give it a try sometime when I have a spare marrow. :-)) .

cut into rings, crumb and fry them, grate cheese and quick grill until cheese golden and bubbling, serve with a ratatouille sauce, side salad and voila main meal.

chop, cook with some onions, capsicum, tomatoes, herbs, spices, garlic, blend and use as a sauce. Cook home made meatballs in it. no need to peel the skin :D.

I haven't made this particular recipe in the conventional oven so yes, I would say that is about right.
