You may find that these, as are many others, are products that appear on the shelves closer to Christmas. Doesn't really help when a person wants to make their cake earlier but such is marketing.

Use the real thing. May need to add extra but it would be a beautiful flavour. I would soak your fruit in the alcohol and then bake it. Yumm. I want to make my Christmas cake but the family don't want it this year. I make it six months in advance and put a little brand in each month.

My fruit is currently marinating in a mix of brandy and rum and smells so YUM as I give it it's daily stir then put it back in the fridge. Will make it next month sometime when I have more time. As we are now only two, I cut my large cake into four small ones last year and put them all in the freezer to use throughout the year. Took one out & decorated it for Christmas and the last cake was finished just recently. I'm going to do the same again this year as it worked so well.
