Jusst made a ricotta and spinach cannelloni with a tomato sauce, it is quite dry. If I made a bechamel and put on top and recoooked it, would this improve it!

How the h*ll do you get the spinach mixture into the dry cannelloni shells! I have tried doing it and got myself into a terrible mess lol.

Oh, good idea thanks and I would do the bechamel sauce and put on the top but cover it with foil or something so the heat cant dry out the cannelloni any more.I have done this with lasagne etc and it works fine!

I use a teaspoon and pop filling in at one end and poke in with finger, then turn it around and do the same at the other end. As it fills up, put hand over end of tube and pack down lightly with back of tea spoon.

I cheat! I make my own pasta (I'm sure it would work with fresh bought lasagne sheets) & put the filling on a strip of pasta & roll it up, may not be the authentic way to go about it, but it's a damned sight simpler.

You can now buy disposable piping bags in the plastic bag/foil etc area in most supermarkets - five in a packet, come with the end cap and five different nozzles.Under $3, very handy to have for quick mixes of cupcakes, or if wanting to use several different colours, and great for kids to use, too.
ETA - meant to say - great for filling cannelloni, and chuck the messy bag in the bin.
As for the dryness, DON'T rebake, just add extra sauce - either tomato or cheese, or both on top, when serving.Probably too much egg in mix!

I dont put egg in the ricotta mix. It was dry because I over reduced the tomato sauce

It's so much easier to use fresh pasta lasagne sheets, just lay the mixture on the sheet and roll up, so easy
