I have a recipe for damson liqueur and wanted some advise on the container to make it in. I am only going to make a relatively small amount to start with. Can I use a 4 litre plastic water bottle!

Got it off the internet. 1lb sugar 1 quart gin/vodka 1lb pitted damsons Mix all ingredients. Place in container. Three months from date, it's ripe. I have another recipe, but it's a little confusing. I do think their method might be better though. 1 gallon jug 1/2 peck damson plums (enough for 3 jugs) 1 1/2 lb sugar 5th vodka or gin Fill gallon jug 1/3 full with plums. Mix sugar with alcohol, pour over plums in jug. Cover with cap Once a week for a few weeks turn over to make sure sugar is dissolved. Tighten cap, swish liquid up over plums, Loosen cap after swishing. Repeat this for 6 to 8 weeks until sugar is dissolved. Takes about 3 months till ready. A peck for those who don't know is equal to the fluid measure eg 1 peck = 1 gallon.

Grandma used to make this.I recall the ceramic big jars/jugs with cork lids. she didn't bother removing pits, just layer of fruit, layer of sugar, layer of vodka. leave for 2 weeks, then shake well, then leave again for min 3 months.lovely in winter to snack on the drunken fruit. used to also make all fruit in vodka. you start with layer of strawberries, sugar, vodka, then add any other fruit in layers as they ripen, rapsberries, currants, blueberries, boysonberries etc, stonefruit, pip fruit.then left for months and opened in cold cold winter around x-mas and after . used to sneak in to the cellar as kids and hide behind the coal fishing our fav fruit with soup ladles .

I couldn't resist a Google and it seems to say that you need a glass container to keep it in to mature.
Hi there - you need to use glass jars with wide necks, and very good sealing lids as you'll need to keep turning the jars upside down and shaking gently to get the sugar to dissolve off the bottom and into the vodka or gin - also - to get best results for your damson vodka liquer you should leave for at least 6 months - or it'll be even better at xmas and jars of it make great xmas gifts too.Enjoy.

I make two or three jars each season,(about Dolmio size) All I do is pack plums in jars and add gin or vodka, The longer they are left the better

We've just made 5 litres of damson vodka and we have those glass demijohn things. Yes it does have to be shaken a bit for the first few weeks and then left for 6 months, take out damsons/plums and then leave for another 12 - if you have the patience. It makes the most amazing liqueur, we did it for first time last year and abolutely love it. When we took out the damsons we kept them in a jar in the fridge and I couldn't leave them alone. It was a Hugh Fearnley-Whittingstall recipe.

I have 2 glass containers I was going to list. They are old and belonged to my grandfather. They are rectangular, measuring 35cm H x 17cm W x 12cm D and have no lids. I believe they may have originally contained battery acid - long since gone and cleaned out. They would be easy to stir contents but not shake up. If you were able to cover them - say a sheet of glass, they may serve the purpose. They are heavy and thick - probably about .75cm. I dont know what quantity they would contain. I can list if there is any interest
