Wouldn't you usually cook the cases and then fill them with the cooked bacon, tomato and egg mixture!That was the way my mum always used to do them.

In Germany the traditional filling is veal and mushrooms cooked with white wine and cream.

I make a basic cheese sauce, but instead of adding milk, add cream.
Once your sauce is ready, add some pre cooked shredded chicken breast and sliced mushrooms to the mix, stir well, then fill vol au vents.
