someone on here posted a pic of a cake they had made, it looked like it had kit kats round the outside and m & m's in the middle of the cake.

my dads 70th is coming up very soon just a small bbq as he doesn't like fuss.anyway i want to make the cake. BUT i need to do an improvement on the carrot cake i made for my nans 85.the carrot cake was wonderful.just the cream cheese icing sucked.i felt super stink as i hate serving something that isn't perfect. especially as one of dads friends the wife is a retired chef and another friends wife is a fab home cook kinda like my kitchen rules kinda cook.and that i am not,,,,,ido bake/cook really well but i want something different and impressive yanno and this pic of the cake looked impressive.

can anyone help!

i want impressive but for some mature people is lollies really the right thing!kids cake yup but oldiies in their mid 60's-70's!

I just made a caramel mudcake, iced it, then put chocolate finger biscuits round the outside and maltesers on the top, then a bow tied around the biscuits.

addie that sounds ok, i kinda have my go to cakes so want to get out of my comfort zone yanno but of course want to impress caramel mudcake sounds delish,, what do you think i could put in the middle that is more 'adult"

oh another question, i am going to my parents up in orewa any suggestions on transporting!

Chocolate fingers are great for cakes and way cheaper than kit kats. I amde my daughter a horse themed cake and spot chocolate welded choc fingers around the edge in ranch fencing style, green coconut grass, marzipan horse droppings.the works. It was great fun playing to see what you can do. Choc fingers are great for forts and castles for the boys as well. Shame kiddo can't eat them as she's been diagnosed coeliac since that birthday.

I had to transport mine too & just had it on a cake tray with cover, put in a box, with a towel over the top to stop the sun getting at it.
You could put whatever treat the recipient liked in the middle! Marshmallows, After Dinner Mints, Scorched Almonds!
And Kit Kats around the outside are probably better than choc fingers, just more expensive.

thanks addie for your help,,,i don't have a cake tray but i spose i could use the bottom of my spring cake tin!hm what kinda cover tho! thinking thinking. and i would have never thought about a box.did you put your ribbon round the cake before you took it to the final destination

Yes, I did put the ribbon around it before travelling. And I got my cake tray with cover from the $2 shop!

Seriously if you want to impress experienced chefs and home bakers make your wonderful carrot cake and get a better cream cheese icing recipe then practice it. People like that are far more impressed by something simple done well.

(everyone likes good carrot cake)

Re carrot cake icing- a great hint I got off here- I think it was mackenzie's carrot cake- was to use castor sugar when you make your cream cheese icing- since I have been doing that, I get a much firmericing. I made a huge carrot cake for an engagement party a couple of month ago and it was able to be eaten as finger food handed around. Before using castor sugar, I was always disappointed with the runny cream cheese icing too.

thanks beaker, but i have done the carrot cake not long ago.i am over the carrot cake, banana cake and butter cake, they are my go to cakes. really want something different and exciting.

has anyone made a red velvet cake! that seems so grown up.and a challenge, thought i may try it this weekend as a practice run.i pulled out of a mag a red velvet cup cake recipe.would that work as a cake! Have any of you made one! i have seen these on hottest home baker. i may just ice that like the pic, put chocolate fingers like the poster up there said^^^^^^^^^^^^^ cos they are cheaper than kit kats,,and put scorched almonds on likesomeone up there suggested^^^^^^^^^

I agree.Forget about the unsophisticated decorations - they are more suitable for a children's party.If you want to impress people who are knowledgeable about food plain and elegant is the way to go.Use the best quality ingredients and make a perfect syrup cake, a ginger cake, a peach and walnut cake.Make it in a bundt tin and it won't need childish decorations, just a trickle of lemon water icing.

david i have no idea what a bundt tin is, i have a spring loaded round cake tin and a square one, which i generally use 95% of the time

Here is a photo of one.If you do a lot of baking it is well worth having one; as well as the decorative aspect, the hole in the middle means that cakes cook evenly.
