Injeras

pickles7, Jan 12, 6:35am
Has anyone made them! They can be made using a sour dough. They look nicer than ordinary pancakes

No I haven't but looking on google (of course! lol) it looks like a thin fry bread, so give it a go. They do sound very nice I must admit.

Injera is Ethiopian andmade with Teff flour, which is gluten-free.It is very sour and is steamed, not fried.I haven't made it but have eaten it in various Ethiopian restaurants.I'm not wildly keen on it and find the texture a bit too close to Wettex, but lots of people I know love it.

I had to google wettex - injera I knew :)

Ha!The first time I saw injeera was in an Ethiopian cafe in London. As well as forming the base for the communal food, extra injeera was cut into 12cm squares, neatly rolled and served on a stainless steel plate,It looked like something that belonged in an operating theatre.

That's exactly what it looked like!

Hmmm - wettex alright.

I did them once in my sourdough days and quite liked the flavour. They were done in a fry pan though on low heat as I do not have an injera stone.

They were very much like an old American sourdough pancake :)

It's the texture that I don't like -damp and clammy.I much prefer rice with Ethiopian meals, and our new local Ethiopian cafe is happy to provide it.

The texture looks a bit like a crumpet, I was thinking. I may yet have a go. I will post a pic if I do, in my blog.

I did wait a whole FIVE days for pickles to answer and then felt comfortable to do the necessary research without treading on toes.

You know how skilled I am at research ;)

elliehen, Jan 17, 4:11pm
.and pickles, stay in after school. You ignored your good friend uli's request for five whole days so I thought you must be on holiday ;)

Oh yes your research skills are second to none . and the "not-treading on toes" is legendary. Keep up the good work.
