I like it when it is picked young and sliced into 1cm rounds and steamed then put butter over and lots of salt and pepper. When it's young it's fairly similar to courgette and as it ages and is stored it becomes more like pumpkin.

Steamed is nice can be cut in slices and sauted in butter, in casseroles or stews boilups etc etc a pretty versatile vege really.

If they are young treat them as you would courgette. posted by traceedwards
Great in stirfry's and just Sliced and fried in garlic butter or cubed into stews and casseroles great in boil ups. just boiled until soft with skin on and served with salt and pepper and a bit of butter. posted by beaker59
they are yum do not peel at all or take seeds out, slice thickly and place in frypan with water (not too much you dont wanna cover it), butter, salt and pepper, put lid on - you want to steam them for a couple of mins then take lid off and keep cooking, the end reslut you want is the water to evaporate and it fry lightly golden, its yum i adore it and always eat it this way the way my Parents taught me! posted by motorbo
Mum always Steamed ours and then mashed it with butter salt and pepper posted by crails"
Hope that helps.:-))
