We put a mixture of what ever spice or flavouring is on hand. We put them in a plastic bag with about 1 T of rice Bran Oil & 2 T of flour... . and then have a play, our particular favourite flavours are curry powder (about 1 tsp) a pinch of chilli & some chicken stock (about 2 tsp). Shake it all around and bake in a hot oven on baking paper. Other flavours we play with are Morrocan seasoning, Fries Sprinkles... Have a look at the greggs range and then have a play.

i use flour and whatever spices i feel like, chilli, garlic, etc, and then i deep fry mine, have also after doing them in the flour then dipped them in beer batter and deep fried.

Scrub but don't peel four large spuds, slice into wedges. put in cold water while you mix together 3 tablespoons olive oil, 1 tablespoon soy sauce, 1 teasp minced garlic, 1 teasp ground cumin, 1 tablespoon grated parmesan cheese and 1 tablespoon flour. Drain and dry the spud slices thoroughly and coat with seasoning, single layer on baking paper at 200 to 220 degrees for 35 to 40 minutes, turning after 20 mins. Salt then lift.

We have been running a Wedges comp in our house for quite some time now and I reakon mine are the best, I have tried all sorts of spices and now people turn up for burger and Wedges nights, usuall Friday's... ... .
Chop Agria potatoes up into chip sizes and put into a plastic bag with a couple of spoons of oil, 2 heaped desert spoons of flour, 1 desert spoon of Morrocan spices, 1 desert spoon of chicken stock, 1 desert spoon of fries sprinkles, ... ... ... ... ... ... ... ... ... now- the tricky part... ... ... ... ... . . about a pinch of curry powder, and a 1/2 pinch chilly powder, ( carefull here)
now shake all the contents of the bag up and down, round and round trying to cover all the potatoes in some sort of coating, Put into a pre heated fan bake oven at around 200 degrees untill cooked and turn as required,

Mr or Mrs Toadfish - what are fries sprinkles? Are they a Greggs thing or something you make up yourselves?
Fancy Mr Toadfish venturing into recipes... . I have to admit though (but not to him of course)... but his are better than mine...

i chop and dry some spuds. in a bag put flour, smoked paprika, garlic and a slight hint of lime & chilli seasoning and some salt. add spuds to bag and shake until thoroughly coated. put wedges into oven dish and pour some oil over them, bake until golden and crunchy. i like the smoked paprika coz it gives a smoky flavour.

Wow thanks for every ones recipes & thanks to Mr & Mrs Toadfish for the light hearted banter, I have Moroccan spices in the pantry but have only used it for meat lol, & a lot of other spices maybe I need to experiment. Im off to the supermarket today to buy some Fries sprinkles. Must also agree that you cant beat Agria potatoes if you can get them would also recommend LAURA Red washed potatoes, they just need a quick rinse no scrubbing needed. Thanks again.

An old one I have used for ages. . Combine all ingredients, crush with mortar and pestle and pour into a shaker. Use instead of salt on ya "chups". . 4 tbsp paprika. . 1 tsp cayenne pepper. . 1 tbsp black pepper. . 1 tbsp garlic salt. . 1 tbsp salt. . 1 tsp thyme...

These days I tend to just dry the wedges and then coat with oil, but I occasionally just blend flour with any of the spices in the cupboard that take my fancy on the day. However someone before me has mentioned the real trick and thats getting the right potatoes for the job I like Agria but there are other roasting baking type Potatoes which do as good a job. OOps is that dangerously close to opinion sorry.

I reckon you can't beat olive oil garlic and rosemary and a sprinkle of salt flakes and ground black pepper, then topping with sour cream and crumbled streaky bacon.

I just let him "think" he is the best and make a big fuss... . that way he cooks at least one meal a week... . mmm but his Chicken Burgers and wedges are good... .
