Crispy batter

Whats the secret to really crispy batter.Is it the batter mix or the really hot oil!Please share your secrets.Had the best ever battered fish pieces at a BBQ at the weekend. Fantastic crispy batter - note batter recipedid not include beer.

Battered Fish Fillets
Before you start, drink one beer to check for quality. Good, isn’t it! Now go ahead.

Ingredients

1 case beer
1 cups flour
2 large eggs
1 onion
salt and pepper
fish
deep fryer
oil

Method

Get a shallow bowl, fork, salt, pepper, etc. Drink another beer. It must be just right. To be sure beer is of the highest quality, drink another beer as fast as you can. Repeat.

With fork, mix flour in a large fluffy bowl. Add 1 seaspoon of satl and imx again. Meanwhile, make sure that the beer is of the finest quality– drink another one. Add 2 arge leggs, 2 pinchers of epperp and mix till high. If yeg golk gets stuck in fork, just scrape it loose with a drewscriver. Drink another beer, checking for tonscisticity.

Next sift 3 cups of pepper or salt (it really doesn’t matter which). Drink antoher reeb. Sift 1/2. Fold in chopped oninions and one babblespoon of bree, or whatever liquid you can find if you don’t want to waste beer. Wix mell. Have another beeber.

Pour oil in turn and fry deep fater to higher. Dump ifsh into miexd tabber. Now dropped fillettettes into feep dat rfyer and kooc. Drink the rest of the beer, plug unfry ther and bo to ged.

Thanks that might be a better answer than#4. I had thought of Tempura but have used that before and hasnt been anywhere near as crisp as what I had at this bbq

I use equal amount of flour and cornflour mixed with SODA WATER as i find the soda water makes it more a crispy and bubbly batter.Oil must be hot

Self raising flour and water. crispyas, the secret is to precook the fish in batter and oil, take out and then when the oil reheats up put it back in for the big crisp up,

I foundout!the secret is to use Cornflourmakes a lovely crisp batter. The real advantage of crisp batter is it seals all the taste into the fish. Definitely recommend

I have been advised the secret to crispy batter is to have any liquid added very cold.Works with batter made with water/milk & guess thats why beer batter works so well beer is usually well chilled!

Lately I have been using this recipe from Daryl Crimp's book Seasons of Seafood - comes out really crispy and I just use water straight from the tap
1 cup flour
1/4 tsp baking soda
1 tsp salt
1 1/2 cups water
2 tbsp vinegar
Mix all ingredients until well blended, flour fish before dipping in batter and deep fry.

I like to dip fillets in flour, whisked egg and Panko.The coating is crisp and light.

extremely easy crispy tempura style batter thats always a favorite.
cup flour, half cup cornflour.dash lemon pepper and mix to batter consistency with soda water

I have always used cold milk and it didnt help my batter to be crispy. However tried using a mix of cornflour and flour and that really did the job. Warning dont pour the batter leftovers into the sink and leave it. Goes like concrete.

Bubbles won't make it crisper but will make it lighter. Batters with lots of liquid won't crisp as easily because all the liquid has to evaporate before it starts crisping. Heston as usual is on to it with his "perfect fish and chips" recipe, using rice flour with vodka for the liquid and dispensing the batter from a soda siphon to add bubbles. I haven't tried this yet but it's definitely on my list.
