Pears in Orange Juice. Peel pears, cut a bit off the bottom so they all sit flat. Put in a large pot, add orange juice to cover, add some cloves and cinnamon. Cook gently till Pears are cooked through. Make a raspberry sauce by seiving the seeds out of some frozen raspberries. Drain Pears. Put on plate, add a scoop of vanilla icecream, and pour over coulis...

Pear and Ginger Cake
2 pears 90g butter 1/2 cup caster sugar 2 eggs 1 3/4 cups flour 2 tsp baking powder 3 tsp ground ginger 1 tsp ground cinnamon 1/2 tsp baking soda 1 Tbspn boiling water 1/2 cup milk 1/2 cup golden syrup
Peel & core the pears. Slice one thinly for the top of the cake, and dice the other one to go in the cake. Cream butter & sugar, and beat in eggs one at a time. In a seperate bowl sift flour, baking powder, ginger, & cinnamon together. Mix the boiling water & baking soda in one glass, and the milk & golden syrup in another glass, then combine the two. Fold the three mixtures together, then fold in the diced pear. Pour into a greased and lined cake tin and arrange sliced pear over the top. Bake at 180 for 50-60 mins or until a skewer comes out cleanly. Allow to cool in the tin for 10 minutes before turning out onto a cake rack.

Pear Mincemeat with Apricots
Ingredients
* 6 cups white sugar * 1 teaspoon ground cinnamon * 1 teaspoon ground allspice * 1 teaspoon ground cloves * 1 teaspoon salt * * 8 pounds pears - peeled, cored and chopped * 1 large orange, quartered with peel * 1 lemon, quartered and seeded * 1 tart apple - peeled, cored and chopped * 1 cup dried apricots, chopped * * 1 cup grape juice * 1 cup cider vinegar * 3 cups raisins * 2 1/2 cups dried currants
Directions
1. In a large pot, combine the sugar, cinnamon, allspice, cloves and salt. Mix well. 2. Into the same pot, add the pears, orange, lemon, apple and apricot. Mash together. 3. Stir in the grape juice, vinegar, raisins, and currants. Bring to a boil over medium heat, stirring often. Simmer, uncovered, until thick. 4. Spoon into hot sterilized jars to within 1/4 inch of jar top. Seal. Check seal the top of the lid lid should not move when pressed. If seal isn't good refrigerate and use within 1 week. If stored in well sealed containers in refrigerator, it keeps at least one year!

Pear Sunset
The beautiful red-orange hue of this tasty tropical non-alcoholic cocktail is reminiscent of beachside sunsets. Ingredients
* 1/2 cup cored, pared, and coarsely chopped freshpear * 1/2 cup water * 2/3 oz passion fruit juice from concentrate * 1/4 oz pomegranate juice
Directions
In blender, combine all the ingredients and puree until smooth. Pour into chilled glass and serve.

Braised Pears with a Soy Ginger Glaze
This delightful dish can be made 1 to 2 days before serving. Refrigerate in a covered container and re-heat prior to serving. Serve with grilled pork tenderloin or chops. It would also be delicious with roast or grilled chicken. Ingredients
* 4 tablespoons (1/2 stick) unsalted butter, melted * 3 tablespoons soy sauce * 1 tablespoon grated fresh ginger root * ½ cup packed golden brown sugar * ¼ teaspoon cayenne pepper * 4 firm but ripe Bartlett or Bosc pears, peeled, halved lengthwise, and cored * 2 tablespoons unseasoned rice vinegar
Directions
In a 10-inch saute pan over medium heat, melt the butter. Add the soy sauce, ginger, sugar, and cayenne pepper. Stir until the sugar is melted and the ingredients are well combined and then reduce the heat to medium-low. Add the pears, cut side down, and simmer, basting frequently, until the pears are tender when pierced with a knife, about 8 to 10 minutes. Transfer the pears to a microwave-safe serving dish. Bring the liquid in the pan back to a slow boil and add the vinegar. Simmer the sauce until it is thick and syrupy, about 3 minutes. Pour the sauce over the pears and serve immediately or set aside until ready to serve. Reheat in the microwave just before serving. Serves 4

Caramelized Pear and Chocolate Ganache Pizza
Pizza for dessert? Hey, it’s a pie, right? This one is layered with sweet caramelized pears and rich, dark chocolate. It’s a happy ending for any meal. Ingredients
* 2 small red bartlett pears, thick sliced, seeds and stems removed * 1 tablespoon butter * 1 tablespoon brown sugar * ½ cup heavy whipping cream * 1 cup semisweet chocolate chips * 1 12-inch prepared pizza crust, warm * 1 wedge double cream cheese, thin sliced * 2 tablespoons sliced almonds, toasted
Directions
Melt butter in sauté pan; add sugar and pear slices. Sauté over medium-low heat until pears are golden and caramelized.
Combine heavy cream and chocolate in top of double boiler over simmering water and cook until chocolate is smooth and melted; whisking occasionally. Keep warm.
Slice warm pizza crust into 8 pieces. To assemble each dessert pizza; arrange one slice pizza crust on plate. Top with two cheese slices, one pear slice, another slice of pizza crust, two cheese slices and one pear slice. Drizzle warm chocolate sauce over top. Repeat with remaining dessert pizzas.

This one is a yummy one
Pear chutney
1. 5 T of plain Avocado oil 1 sprig of rosemary 100 g raisins ( I like those green ones) 200 g sultanas 110 grm Demerara sugar( the darker the better you can use coconut suger or palm sugar too) 400ml cider vinegar (I like Coral Tree Organic if you can get it) 100g crystallised ginger, finely sliced 800g pears coared and cut into wedges pinch of salt 1/4 of a nutmeg freshly grated 2 t allspice (ground)
Sterilize glass in boiling water the recipe makes around a litre Heat in a large heavy saucepan the avocado oil and add to it the rosemary leaves, then the sutanas and raisins, then the sugar. stir them and wait till they start to caramelize. 2. Add vinegar and boil for 3 minutes, add the pears, ginger and spices, bring to the boil, then turn down the heat. Simmer and WATCH as it does often stick Cook until most of the liquid has gone. Dont over cook or pears will lose thier shape and become mush. Spoon into hot clean jars right to the top and seal.
