Does anybody know where I could find some at a reasonable price! I have done the google thing but could only find it in large quatities and it was rather expensive! Alternatively, can/could you make it! It's for a pistachio ice cream :o)

I have bought pistachio essence at an Indian grocer, if that's any help. Thinking about it, they may well have pistachio paste as well, though I'm not entirely sure .!

Could you not grind the pistachio nuts in a coffee grinder to the like of ground almonds and add to the ice cream mixture.I make my own ground almonds in my coffee grinder and if I keep grinding they become a fine paste like mixture.Just a thought, Pistachios are quite expensive anyway so not sure if ready made paste would be cheaper. At least you could just do the amount you need.
Like kesley suggested, try an Indian grocer, they use pistachio nuts a lot in their cooking, especially in their sweetmeats.

Maybe a pestle and mortar! I'm going to try it when I get some next. Sounds nice.

Thank you all for your help, I'm most grateful :o)nauru I'm going to try out that link, 245sam I couldn't get thru on that link but thank you for your help. I will post back with the results and some photos, as the ice cream is part of a greater plan involving a young friend, Heston Blumenthal's fantastic feasts and my offer to help him re-create his "edible graveyard" !
