Aren't 'grits' just coarsely ground cornmeal!

Im not 100% sure Ive never cooked with them. I know I can't find anything labelled grits around here. Its common in the southern usa but not here really.
Polenta is NOT the same as the grits you get in the Southeastern parts of the United States. Polenta is simply ground field corn kernels; grits, on the other hand, are made from hominy. Hominy is field corn kernels which have first been soaked and cooked in a dilute solution of a strong alkalai (such as calcium hydroxide [slaked lime] or potassium hydroxide [potash]). After thoroughly rinsing the kernels in fresh water, they are dried and ground into grits. This process is known as nixtamalization, and dates as far back as 3500 BPE. Nixtamalizing corn frees niacin for use in the body, softens the kernel for ease in grinding, and gives the product an improved flavour and aroma.

I've never been able to make fish cakes because weenevhr I think about them, I recall the version we grew up eating (which I didn't like very much). However, these look much different (and way yummier!).
