Why does it have to be green!Just curious.I'm from Ireland and we certainly dont eat green food or drink green drink on Paddys day.
Why not just do something like an Irish stew, beef and guiness stew or Brown Soda bread with smoked salmon.

Brown soda bread with smoked salmon, sounds absolutely delicious! Too hot up here for a stew tonight, very tropical feeling, love the sound of the salmon though!

.because every photograph you ever see of the Irish countryside is of lush green fields, every sports team wears green, Riverdance-style troupes have green lights diffused across the stage, Leprechauns wear green jackets etc etc

It's rather like the New Zealand black.

Wikipedia explanation below. It doesn't answer the question about the colouring of food, but it explains why St Pat's day is a greenies day.

"Originally, the colour associated with Saint Patrick was blue. Over the years the colour green and its association with Saint Patrick's Day grew.[11] Green ribbons and shamrocks were worn in celebration of St Patrick's Day as early as the 17th century.[12] Saint Patrick is said to have used the shamrock, a three-leaved plant, to explain the Holy Trinity to the pagan Irish, and the ubiquitous wearing and display of shamrocks and shamrock-inspired designs has become a feature of the day.[13][14] In the 1798 rebellion, to make a political statement, Irish soldiers wore full green uniforms on 17 March in hopes of catching public attention.[11] The phrase "the wearing of the green", meaning to wear a shamrock on one's clothing, derives from a song of the same name."
