Using a microstoven tagine ( tajine)

Hi.was just wondering how to actually use one, if some kind person can explain for a dummy! I thought there were instructions and maybe a couple of recipes with it, but no such luck. Have been googling it, but all the recipes seem to think you are familiar with cooking in them. I am trying a pork and prune dish now, but even though it is simmering on low, and I followed the recipe (for once), it keeps overflowing. Seems like too much juiice in it. It is a 30cm base one, so in comparison to others, seems quite a large size. .Have posted this in General, as well, as wasnt sure where the best place for it was. Thanks for any help.

I prefer the slow cooker but someone will know where to cut n paste from, for you.

I have not used a microstoven one. I take it you don't have a recipe book! I brown the meat and spices etc in the tagine, then turn down and add what ever water and other ingredients are in the particular recipe. I simmer for longer than the recipe says. Use a simmer mat which means you will be able to simmer all day without it drying out or burning ( not that you need to do it all day) I make a lamb, prune, apricot and almond one. I now do as per above, but ;eave out the honey, prunes, apricots etc. Turn off and cool, then refrigerate overnight and then next day, I slowly simmer, adding all the other ingredients required. Makes for a lovely tender meal.
