What to make with limes?

I have just moved and i have a lime tree full of beautiful limes i would like to use before they go yuck. There are plenty of them but not enough to sell off so would love some recipes to try out on how to use them.

Thai Beef Salad with Lime Juice

serves 4

350g lean beef sirloin, rump or fillet
2 tab fish sauce
4 tab lime juice
1 tsp palm sugar
½ tsp roasted chilli powder
3 shallots, finely sliced
lettuce leaves
⅓ c coriander leaves, roughly chopped
⅓ c mint leaves, roughly chopped

Mix fish sauce, lime juice, sugar and chilli powder, add shallots.

Line a serving plate with lettuce leaves.

Sprinkle beef with salt and pepper and grill over high heat to medium rare.Slice crosswise into strips and add to dressing, combine well.Check seasoning and adjust if necessary.Spoon over lettuce leaves, sprinkle coriander and mint on top to serve.

Lime Syllabub

2 limes
¼ cup late-picked white wine (i.e. dessert wine)
1 tbsp brandy
1 tbsp caster sugar
450 ml cream

Remove zest with a vegetable peeler, then juice limes. Put all ingredients except cream into a basin and refrigerate overnight. Next day remove zest. (If you prefer the texture, the zest can be finely grated instead of removed in one length and then left in the sweet.) Whip liquid and cream in an electric mixer until quite firm.

Spoon into glass bowls and serve with a crisp biscuit or berries or spoon onto a wine trifle in place of the usual whipped cream.

Lime Cashew Shortbread

70g sugar
thinly peeled zest 4 limes (or 1 orange)
170g butter
170g plain white flour
50g semolina
½ tsp baking powder
100g cashews (or walnuts) – broken into quarters

In food processor whizz sugar and zest until finely pulverised.Add butter and whizz until creamy.Sift flour, semolina and baking powder, add to processor and pulse until just mixed.Mix in nuts by hand.

Press into 20cm tin.Bake 180 degrees C. 25 – 30 min.Cut while warm.

Lime Marmalade

Simmer whole fruit covered with water 30 min.Slice and return to same water and leave overnight.

Add (for every 10 limes) juice of one lemon.Measure equal volume of sugar, mix in and stir over heat until dissolved.Boil until it sets (10 min plus).

Remove any obvious pips

Also use method for other citrus.

Lime Relish with Kaffir Lime

1kg limes
2 onions, chopped finely
1 tablespoon salt
3 cooking apples, peeled and chopped
400ml cider vinegar
1 teaspoon ground ginger
1 cup raisins
2 1/4 cups White sugar
8 kaffir lime leaves

Cut limes in half then quarters lengthways. Cut ends off and slice thinly.

Bring to boil limes, onions, salt, apples, vinegar, ginger and raisins.Simmer 60 minutes.

De-vein the kaffirlime leaves, fold in half and slice very thinly into
strips.

Stir the sugar and sliced leaves into the mix. Simmer for a
further 30 minutes until thick.

Pour into hot sterilised jars and seal.

You can freeze them, great to have when they're in short supply and are really expensive to buy!

We freeze the juice as cubes - go very well with gin and lemonade

Freeze the juice in ziplock bags
Can do the same with the zest.
Make lime sorbet.
Lime Coolade ( a nigella recipe from Forever Summer)
Key lime Pie( also Nigella.Nigella Bites)
