Buy a pack of round rice papers. Fill with a nice coleslaw/salad of your liking and top with shrimp/prawn/ salami/ ham or what ever meat/fish you like. Use a nice sauce and what ever else you would like to put in.soak the rice paper place the fillings roll and tuck in the ends. Very delish served with what ever you like.

The above can be pre made as they keep very well in the fridg. They look great too. Ideal also for packed lunches. Everyone here loves them.

Why not gently poach some chicken breasts wrapped in cling foil. then get some WHOLE lettuce leaves for wraps.make a nice salad with red onion, mushrooms, tomatoes, cucumber, and capsicum. add strips of the chicken, salt pepper and some very fine chopped tarragon.Roll up in the lettuce leaves to make wraps and pin with toothpicks.add a dressing or mayo .
Can make ham or tuna ones as well . nice thing is they can be made in the morning and left in the fridge for your lunch.
You could make prawn and pork mince deep fried spring rolls. smaller ones to put intoa dipping sauce.soy or what ever you want.pre deep fry till set and have ready to finish off till golden when needed. 2 -3 mins.
Steamed mussels with a butter garlic, parsley, basil dip.
Bruschetta with fried Tomato, Garlic and Basil.can make a variety of toppings.

They're pretty popular here too - and soooo easy to make.I agree about the looking great as well.Impress your guests.I don't put any dressing in mine, instead serve as a dipping sauce.
