Can I prepare a chicken dish with a creme fraiche ahead of time and reheat it or will it separate or worse spoil?

dlb121, I haven't actually done so myself but I have cooked with creme fraiche and it is much easier to cook with than e. g. sour cream as it can actually be heated without fear of separation. IMO your chicken dish should be fine prepared ahead and reheated. :-))
