Just made almond butter cookies - almond butter, egg, vanilla extract.

PORRIDGE MUFFINS
BOWL 1
1/2 C Oil
1 Grated Apple
2 Eggs
1 C Cooked Porridge
1/2 C Sultanas
1/2 C Coconut
1 tspn Van Ess
Mix till no lumps.
BOWL 2
1 C Flour
2/3 C Brown Sugar
1 tspn BP
1 tspn BS
1 tspn Cinnamon
Mix well.
Add Bowl 2 to bowl 1 and just mix.
Spoon into muffin tins.
Bake 15 mins at 180

BREAKFAST MUFFINS

Ingredients
1 1/4 cups (275g) caster sugar
2 cups (300g) plain flour
2 tsp ground cinnamon
2 tsp baking powder
1 cup sultanas
1 cup desiccated coconut

2 cups grated carrot
1 cup grated apple

1 cup chopped walnuts

3 eggs

1 cup (250ml) vegetable oil
1 tsp vanilla extract

Icing sugar, to dust

Method
1. Preheat oven to 180degC.

2. Sift sugar, flour, cinnamon and powder into a large bowl.

Add sultanas, carrot, apple, coconut and walnuts.

In a separate bowl, beat together the eggs, oil and vanilla.

3. Add to the dry ingredients and fold until just combined - do not over mix.

4. Spoon into muffin pans and bake for

25 minutes or until golden brown.

Serve dusted with icing sugar.

Top with sunflower seeds if you wish before baking.

Kirk's Krazy Cake! (it's not mine. just put that for the recipe folder lol)
1/2 c oil
3/4 c water
2 tbsp vinegar (malt is nice)
1 tsp vanilla

1.5 c flour
2 tbsp cocoa
1 tsp ginger
1 tsp cinnamon
1 tsp b.soda
1 tsp salt
1 c sugar

starting with liquids, put all ingredients into a food processor. Blend until mixed, pour into cake tin or alternatively make muffins.
Cake 180 C 30-40 mins or until cooked. muffins,. as usual for muffins lol awesome flavour, texture and colour

This one has no butter or flour and is so quick to make that it can be ready to go in the time it takes the oven to heat up!

1 cup peanut butter
1 egg
3/4 cup raw sugar
1/2 teaspoon baking soda
75g (or more if you are a chocoholic) of chocolate (chips, drops or chopped dark chocolate)

Heat oven to 180 deg. Combine first 4 ingredients in a bowl then mix in the chocolate. Place teaspoon sized amounts on an oven tray about 5 cm apart(you will probably need two trays). Bake for around 12 mins or so until lightly browned on top - not too much as they are nice chewy. Leave to cool on the baking tray. Try to avoid eating the whole lot! :-)

peanut cookies
1 cup peanut butter
2 eggs
1 teaspoon vanilla

1 cup flour
2 teaspoons baking powder

Directions:Prep Time: 10 mins
1 Mix together peanut butter, eggs, vanilla, and sugars in medium bowl.

2 Mix in flour and baking powder. Stir in chocolate chips.

3 Drop by teaspoon onto lightly greased baking pan.

Bake for 8 min at 375*F. Let cool and enjoy! !

You can also make Peanut Butter cookies with 1 cup peanut butter, 1 cup sugar, 1 egg & 1 tsp vanilla.voila. No butter and no flour.

Butterless Banana Cake :

1.5 cups of plain flour
3 teaspoons Baking Powder
1 teaspoon Baking Soda
3/4 cup of sugar

Sift into large bowl, then add :

2 eggs (lightly beaten)
1/2 cup oil (I use Olys or Rice Bran)
3 mashed bananas

Mix and pour into a lined cake tin. Bake at 150 C for 1 hour.
15 Prep time - and it's lovely! Ice with icing of your choice.
