No - sorry I wouldn't know anybody who would do that sacrilege. How about roasting the breasts with skin on and eating them as they are?

Try the game butcher in Katikati he's supposed to be pretty good but do save some to fry like Uli suggested thats what I did with all mine (OK so it wasn't many) Actually most of the game butchers will do them. Google one in or near Taihape.

That game butcher in Katikati makes lovely salamis with duck, my friend and his mates take all their stuff to him to make salamis. Bit far to go from Taihape though methinks.

Putaruru Homekill Butcher makes the best Duck Breasts salami's.Everyone around here raves about them!

thanks for the ideas everyone, murdoc4, do you know the ph number please. Have tried duckbreasts cooked med rare and we love them, great with a bit of watered down hoisin sauce as a dipping sauce but want to try something else
