Parsnips

hi there have an excess of parsnips does anyone know the best way to freeze them?? Thanks in advance

They may be ok peeled, cut into pieces and frozen like that...I have never frozen parsnip...why don't you just leave them in the ground, that's what we do

I have peeled cooked and mashed smaller quantities, frozen them and when thawed added them to mashed potatoes as toppings for mince dishes.At least they won't be wasted!

I freeze mashed parsnips mixed with mashed carrots, my husbands favourite veg, keeps great for months.

Parsnips can indeed be successfully frozen raw and we usually then have them roasted - simply peel and cut into serving sized portions, then freeze and cook/roast directly from the freezer.:-))

Dad used to do what 245sam said.. he'd free flow them on the oven trays first, then bag up.Perfect roasted, not sure we ever tried parsip and carrot with them.
