You could add them to a risotto, or to soup, or a bacon and egg pie, or a " savoury bake " or vege fritters, or the filling for stuffed baked potatoes or use them when making stock.

rainrain, since it's really important to you...the rule is:
After a short vowel, double the consonant, e.g. patty/patties.
After a long vowel, keep the consonant single. e.g. tato/taties.
