How do you make this cheesy nibble?

daleaway, Jun 5, 1:21am
From many years ago I remember a cocktail nibble that was like a little cheesy shortbread, with some cayenne or chili, and the pieces were rolled in coconut before baking.

I could always make something up, but maybe someone here has the actualrecipe?

Edmonds one and the one I use:
1cup flour
1Tbs icing sugar
1tsp baking powder
pinch salt
pinch cayenne pepper
2Tbsp butter (I use a bit more)
75g grated cheese (I use closer to 100g)
Method:
Sift dry ingredients, rub butter in until like breadcrumbs, (quicker to do in food processor).
Stir through cheese and mix to a stiff dough with a little milk.
Knead and roll out very thin, cut into fingers or squares and bake 10mins @ 200C.

Thanks but sorry, these recipes will only produce cheese straws or crackers, whereas the one I recall was more like a shortbread in texture, and was definitely coated in desiccated coconut.
They were little lumps about the size of Cheezels, only flattish.
Oh well, I'll just have to invent something.

cheese sables?

Certainly sounds like it razell. Perhaps the coconut was an (unusual) variation...sometimes they're sprinkled with sesame seeds.
From the web:
CHEESE SABLES
Makes about 25 thick sables or 50 thin sables
Ingredients

* 100 g (⅔ c) plain (all-purpose) flour
* 100 g (1/3 c and 1 ½ T) unsalted butter, softened
* 100 g (3 ½ oz) strong hard cheese, finely grated
* 1 medium egg yolk
* Pinch of cayenne/mustard powder (optional)

Method
1. In a food processor, blend the flour, butter, cheese, egg yolk and cayenne (if using) until a dough is formed.
2. Shape the dough into a log* about 4 cm (1 ½ inch) in diameter. Wrap in cling-film (plastic wrap) and allow to chill for 1-2 hours or until very firm.
3. Line 2 baking trays (pans) with parchment paper.
4. Preheat the oven to 200°C/400°F.
Using a very sharp knife, cut off thin rounds and place onto the prepared trays (pans), repeat as necessary^.
5. Place the trays (pans) into the middle of the oven and bake for 10 minutes or until lightly brown and crisp. Allow to cool on the tray (pan) for 5 minutes before using a spatula to transfer them onto a cooling rack. Allow to cool before enjoying!
* Alternatively you can chill as 2 flattened discs. After chilling, roll the dough out and cut the sables into shapes you prefer. Bake as normal.
At this stage you can keep the log in the freezer for unexpected guests.

Thank you, I'll have a go at that one. It looks like the right texture.
And I'll try some with sesame seeds and some with coconut!
