my whoopie pies have gone super flat whilst baking...anyone know how to keep the nice round shape?

Maybe oven wasn't hot enough or mixture too moist. Did you use bought pastry & fill?

It will depend on the recipe you use but I found with ginger kisses that adding a little more flour solved that problem - it only took 2-3 teaspoons more to make the difference for me.
