Jerusalem Artichokes

Does anyone have ideas for using these?So far we have had them roasted and in soups which is delicious.But this year they have gone mad and one can take only so much soup with these!Can I cook mash and freeze for later use? Thanks

Used to boil them and make a cheese sauce

Roasted with olive oil and garlic. Dont over cook, and consume within 2 days of harvest.

You are thinking of globe artichokes, which are a completely different vegetable.

Slice and add them to stir-fries, or to a potato-bake,steam or boil and eat cold or add to salads.. grate and use to make fritters..

There are usually some listed on Trademe throughout winter..
