Help with spices please!

i thought i would try to be adventurous so i bought a lot of different spices. now i have know idea what do do with them. combinations or amounts to use
would love some ideas for tasty dinners.
i have ground coriander cumin, paprika, chinese 5 spice ,curry powder( bought whole ginger root and garlic) tumeric, nutmeg ,cinnamon, cloves ginger, mixed spice, sage mixed herbs.
dont know if there are some missing i should have.? shopping day tommorrow
any suggestions would be greatly appreciated and all kinds of dishes welcome

Dutch Apple Cake
125g Butter
1 C Sugar
2 Eggs
1 1/4 C smooth WARM apple sauce
2 C Flour
1 tspn BS
1/2 tspn Salt
1 1/2 tspn Cin
3/4 tspn Cloves
2 Diced Apples
1 C Raisins
1 C Nuts of your choice
Mix butter, sugar and egg for a few mins.
SLOWLY mix in Warm apple sauce.
Add dry ingredients and mix in.
Add raisins, chopped apple and nuts.
Bake 180 45 mins
This is a winner in this house and goes sooo fast!!
I double it and freeze 1 :) Have made it with maca nuts and walnuts so far. I have even added speculaas spice and not added the cin and cloves. Both are winner on taste!!

Makes 3 - eat one, freeze one, give one away!
Mix in a large bowl – 2 cups boiling water,250 g cubed butter.

Add 2 cups sugar, ¾ cup golden syrup, 2 tsp baking soda.Stir (using a large whisk is helpful).

Add 4 tsp ginger, 2 tsp mixed spice, 2 tsp cinnamon, 4 cups flour, 2 tsp baking powder,
Divide into 3 loaf tins (eat one, freeze one, give one away!).
¼ hour @ 180 C then ½ hour @ 160C.
Keep testing until skewer comes out clean.
Texture better the next day.

Ginger Loaf
50g Butter
3 Tspn Golden Syrup
1/2 C Sugar
1/2 C Boiling Water
1 Egg
2 tspn Ginger
1/4 tspn BS
1/2 tspn BP
1 C Flour
Place butter, sugar, golden syrup and boiling water in a bowl and stir until melted.
Add egg and whisk briskly (I let it cool down a bit first!)
Add dry and mix.
Place in loaf tin.
30 mins approx at 180
If you love ginger, add some chopped crystallized ginger.
Great with chopped apple and or sultanas also.

Donut Muffins I made these yesterday, they taste even better than donuts! Mix 1/2 cup oil, 1 egg & 3/4c milk together. In another bowl mix 2c flour, 1/2t baking powder, 1/2t salt, 1/2t nutmeg, 1c sugar and 1t cinnamon. Add wet ingredients to dry and mix til just blended. Put in muffin pans and bake at 180 degrees for 20 minutes. While still warm, melt some butter in a little bowl. In another bowl mix 1c sugar and 1t cinnamon together. Dip the top of the muffins in the butter, then dip into the cinnamon sugar. Let them cool. Makes about 12 med sized muffins.

ANY TIN FRUIT MUFFINS

2 c flour, 4 t baking powder, 1/2 c sugar, 1/2 t salt - put all into bowl.

Melt 75 g butter, add 1/2 c milk to butter and 1 egg + juice from tinned fruit.

Mix dry into wet mix until Just mixed.

1/3 fill muffin tin with mix then add sliced fruit and choco buttons (not touching sided) then cover with more mix.

Additional extras. Sprinkle top with cinnamon and sugar mix or add a bit of fruit or choco buttons.

Bake at 200 for about 12 - 15 mins :-)

fresh ginger and garlic I add to stews, stir fries. Ginger is good to add to the pot when cooking corned beef along with a bit of malt vinegar and brown sugar and a few bay leaves. Melt some butter and add finely chopped garlic and then you have garlic butter for garlic bread or adding to mashed spuds, cooking steak etc.

sage is good for stews and mince along with stuffing and fish and a bit on pizza!

a good 2cm chopped to be thrown away after cooking.

the 5 spice you can sprinkle over your meat before grilling or frying:) If you like the taste, you could sprinkle over a roast.

Curries, are not curries without coriander, cumin, tumeric, fresh or dried chillis, garam masala, mustard seeds, fennel seeds. If you have fenugreek only add 1/2 teaspoon, as it's quite bitter.

Cumin is commonly used in Turkish, Moroccan and other Middle Eastern and North African cuisines as well as \indian and Sri Lankan.Get some books out of the library that specialise in these cuisines, or do some internet searching until you find something you like the idea of.

nutmeg, cinnamon and cloves mixed together with some salt.
Then rub this onto pork (chops) and grill or bake. really nice.

Chinese 5 spice I use in stir fries. add it at the end along with some honey, soy sauce and cornflour to help thicken any liquid.

Best idea is to get an idea what you want to cook and then get the spices to suit - otherwise you end up with lots of waste :)

Well cumin & coriander are my two favourite spices as they can be used inThai, mexican & Middle Eastern food!!
