Vegetarian recipes for crock pot?

Does anyone have any good vege recipes for the crock pot?Or are there any sole crock pot vegetarian books out there?

I have used it for cooking bigger quantities of dried beans - then frozen in small packs for later use.

I have also used it for chickpeas and lentils, adding the veges later, or sometimes frying onions, then adding veges in a normal frypan - then adding the chickpeas or beans from the crockpot.

It also makes very nice rice/milk puddings without all the stirring.

Pure vege cooking is much faster in a normal pot on the stove top or in a wok in my opinion - 5 to 20 minutes max for most veges.

I have a book out from the library at the moment called The Gourmet Vegetarian Slow Cooker. It is split into regions, so it has a Mexican chapter, Greek, Asian, etc. I haven't cooked anything yet but the recipes look delicious!
