Anyone from Middlesbrough? Perfected a Parmo......

mmmmmmmmmmm Parmo, 10 years living in NZ and am missing the heart attack Parmo! I have made my own version but feel it is missing something (probably the deep fried part! )anyone got a great recipe? Pretty much for those not familiar - chicken parmo is flattened chicken breast breadcrumbed then cheesy sauce over the top and cooked... . .
